Asian Fusion Noodle Omelette

Eggs, a worldwide favourite ingredient, are used in countless recipes. You name it and an egg is most often present in cakes, custards, soufflés, savoury dishes, and the list goes on.

At our home, eggs in some form are always present at breakfast time. My favourite anytime dish is bedo dabroti, an omelette and a slice of bread.

Today’s recipe incorporates instant noodles mixed with beaten eggs and some vegetables to give you a noodle omelette. The slight difference here is that I have not cooked the noodles, so the omelette has a bit of crunch. A hearty snack or an accompaniment to a bowl of soup or a crunchy salad.

I came across this idea on a TikTok video and played around with the additional vegetables and realised that we used to make a similar omelette using cooked noodles. Flashback mode 😊. Ingredients

  • 2 packets of any brand instant noodles, Maggi, Indomie, etc
  • Spice mix sachets included with the noodles
  • 2 tbsp finely chopped carrots
  • 2 tbsp finely chopped cabbage
  • 2 tbsp finely chopped paprika
  • 2 tbsp finely chopped spring onions and celery
  • 3 big eggs or 4 small eggs

Method

  1. Put the noodles from the two packets into a food processor and blitz for a few seconds to get crushed noodles. Alternatively, crush the noodles manually while still in the packet using your hands or a rolling pin.
  2. Transfer the broken noodles to a big bowl and add the spice mixture from both packets. At this point, you can add some chilli flakes or chopped chillies if you wish.
  3. Add the carrots, cabbage, paprika, spring onions, and celery to the noodles.
  4. Beat the eggs separately and add them to the noodle mixture. Mix well.
  5. Heat a nonstick frying pan and add about 3 tbsp oil. Pour in the egg and noodle mixture and spread it evenly.
  6. Cook on a low flame for a few minutes until golden brown. Do not cover.
  7. Gently flip the omelette and cook for a few more minutes.
  8. Remove onto a platter and cut into wedges.
  9. Serve hot.

As we are using the spice packets included in the instant noodle packets, there is no need to add salt or any other spice unless you wish to make it more spicy.
