Singapore-Style Rice Noodles with Kaffir Lime. A fragrant and flavorful dish, these Singapore-style rice noodles are infused with curry powder and kaffir lime leaves, creating a perfect balance of spice, zest, and umami. This recipe offers the choice of using paneer, tofu, or eggs, making it a versatile and satisfying meal. Ingredients • 100g raw rice noodles (yields approximately 250g after cooking)

  • • 5 kaffir lime leaves, finely sliced
  • • 1 onion, thinly sliced
  • • 2 tsp garlic, finely chopped
  • • 3 tsp curry powder.. I used Baba’s curry powder.
  • • 1 tbsp lime juice
  • • 1 tsp mushroom seasoning or MSG
  • • 1 tbsp soy sauce
  • • 1 tsp sugar

• 150g paneer or tofu (or 2 eggs, beaten)

• 2–3 tbsp oil

• Finely chopped coriander, for garnish • Fried onions, for garnish Instructions

  1. • Prepare the Noodles:
  2. Cook the rice noodles according to the package instructions. Drain and set aside. In a bowl, mix the cooked noodles with curry powder, 1 tbsp oil, and soy sauce, using two forks to evenly coat. Keep aside.
  3. • Sauté the Aromatics:
  4. Heat 2 tablespoons of oil in a pan over medium heat. Add the sliced onions and 1 teaspoon of sugar, and salt to taste, Sauté slowly until the onions turn slightly pale brown at the edges.
  5. • Add Flavor:
  6. Stir in the chopped garlic and sauté for a minute until fragrant. Add the sliced kaffir lime leaves and mix well.
  7. • Cook the Protein:

Move the onion mixture to one side of the pan. If using eggs, pour them into the empty space and scramble lightly. If using paneer or tofu, add them now and sauté for a minute.

  2. Add the seasoned rice noodles to the pan, some chopped coriander, and toss everything together, ensuring the flavors are evenly distributed.

• Final Touches:

  1. Sprinkle chopped coriander over the noodles, squeeze fresh lime juice on top, and garnish with crispy fried onions.
