Bistik Ayam/chicken/paneer

BISTIK AYAM/CHICKEN /PANEER

**Bistik** is the Indonesian adaptation of beef steak, influenced by Dutch colonial cuisine. It typically consists of thinly sliced or tenderized  beef/chicken The dish combines Indonesian flavors with European-style cooking, creating a unique fusion. The meat can either be grilled or crumbed and fried katsu style. Normally served with steamed vegetables, French fries and cucumbers. Typically a brown or red sauce will be served with this. At Home we normally make it with chicken made Katsu style. And  we serve it with coriander spaghetti ( which is my mom’s recipe, she made macaroni this way.)  This is simple recipe. And a complete meal. Do try it out VEGETARIANS can use Paneer, and instead of egg, just dip in  a seasoned flour slurry, and crumb the paneer.

.. CHICKEN

Take  2 halves of chicken breasts and slice thinly.

So you get thin and wide slices.

Marinate in 1 tbsp soya sauce, salt and pepper to taste.

Dredge in flour mix. Dip in beaten egg.

Repeat dredging in flour mix

Dip in egg once more, and finally coat with bread crumbs. Press firmly and refrigerate for an hour. Deep fry the chicken. **flour mix.. 1 cup APF, 1 tsp garlic powder, 1 tsp salt, 1 tsp pepper powder, 1 tsp dried herbs of your choice( I used oregano).

.. SAUCE

  1. Cut into quarters, 4 tomatoes and boil  in about 1 cup water..
  2. Blend and strain.

Dispose seeds and skin.

  1. Heat 1 tbsp butter
  2. Add 1/2 tbsp chopped garlic.
  3. Add back the tomato puree.
  4. Add 1/2 cup green peas, ( I used frozen)
  5. Add 2 tbsps tomato ketchup
  • 1/2 tbsp sugar
  • 1 tsp red chilli powder
  • Salt to taste
  • 1 tbsps of corn flour mixed in 3/4 cup cold water.

Bring to a boil, check seasoning and thickness. Lastly add 1 tsp apple cider vinegar.

..SPAGHETTI

  1. Boil 300 gms of spaghetti till a La dente.( add salt and oil)
  2. Drain.

Immediately in a Pan heat 3 or 4 tbsps of olive oil.

  1. Add 2 heaped tablespoons of garlic.
  2. Saute.
  3. Add 2 tsps freshly ground black pepper.

Immediately add 1/2  cup of finely chopped coriander. At this point, you will get a wonderful fragrance.

Now add spaghetti, salt to taste and toss.

I also add some grated cheese while tossing the spaghetti. Keep warm.

Step 3.

Vegetables of your choice, to be cut into Batons and steamed. ( I use, carrots, French beans.) Cucumber cut into batons. French fries. Assembling. In one big platter, arrange spaghetti, steamed vegetables, cucumbers, French fries and chicken. Serve sauce separately.
