
URAP… Pronounced.. Ooorup. This dish is made with steamed vegetables and spiced coconut. Generally served as a side dish in Javanese cuisine. We generally have this with hot steamed rice and a main of baked chicken. It’s a fresh tasting salad. Which I personally love. This is also very similar to the Pol sambols of Sri Lanka. A very easy and doable recipe. Do try it. For the steamed or blanched vegetables
- 1/2 cup heaped beansprouts
- 1/2 cup tightly packed chopped spinach
- 1/2 cup heaped sliced cabbage
- 1/2 cup yardlong beans cut into bite size pieces.
Steam or blanch the above vegetables and keep aside Also cut 1 cucumber into cubes. To make the paste.
Grind the following, adding a little water.
- 4 shallots
- 3 garlic cloves
- 5 to 6 pairs of kaffir lime leaves( remove center stem)
- 2 to 3 fresh red chillies.
- 1 inch piece of KENCUR( this is an aromatic ginger, which Imparts a wonderful fragrance and a distinctive taste)
** Kencur.. Pronounced kenchur also called sand ginger and is from from the galangal family. A more fragrant cousin. 😊. Replace kencur with galangal if you don’t find kencur.
- Heat 2 or 3 tbsps of oil in a pan and add the paste.
- Saute till oil separate, season with Salt and 1 tsp sugar.
- Now add 1/2 cup of grated coconut.
If needed add another 1/4 cup of coconut. Shut the fire and add 1 tsp of kaffir lime juice or normal lime juice. To serve..
Mix the steamed vegetables, cucumber and cooked coconut together and serve at room temperature.
